Bobbattu is an Indian sweet flatbread that originates from Maharashtra and southern India.

  • 1 tbsp grated coconut.
  • 1 tsp coconut oil
  • 1 ½ tsp psyllium husk
  • ¼ cup coconut flour
  • 2 tbsp almond flour
  • 1 cardamom
  • 1 ½ tbsp erythritol
  • ½ cup water
  • 2 tbsp water melon seed powder
  • Take a bowl and add coconut flour, husk, coconut oil and mix well. Add warm water and make a dough like chapathi and cover the dough.
  • Heat a pan and add all the stuffing ingredients except coconut. Keep on stirring till it comes thick consistency. Add coconut and mix well. Allow the stuffing to cool down.
  • Make the dough into four parts. Take a parchment paper, roll the dough thinly in a round shape. Take one rolled dough, place the stuffing and spread on it. Now place another rolled though on top of the stuffing and press gently to stick together.
  • Heat a pan on medium flame, place the poli and sprinkle ghee. Cook poli on both sides and serve hot.
