
Beans Sambhar

This Recipe goes back to the roots of udupi with simple spices and coconut, you can use other vegetables instead of just beans and the choices are just endless
- ¼ kg fresh/frozen beans
- 1 cup of fresh or desiccated coconut
- ½ cup tur daal
- ½ tsp turmeric powder
- 1 tamarind (medium size)
- Salt to taste
- Few curry leaves
- 1 tsp oil
- 1 tbsp coriander seeds
- ½ tbsp cumin seeds
- ½ tbsp urad daal
- ¼ tsp fenugreek leaves
- 5 Kashmiri red chillis
- Chop all the beans to 1 inch long pieces and keep aside
- Wash and pressure cook tur dal with required water until they are completely cooked and soft
- Take 1 cup of water and add all the chopped beans along with curry leaves
- Add a tbsp of turmeric powder and mix well. Close the lid and allow to cook for 5 minutes. Dont overcook the beans too
- Meanwhile, roast cumin seeds, urad daal, coriander seeds and red chillis with a tbsp of coconut oil till you get nice aroma
- Allow it to cool completely and in a blender take roasted masala, coconut, few curry leaves and tamarind
- Blend it to a smooth paste adding required amount of water
- Once the beans are cooked add salt and bring it to a boil
- Now add cooked smashed dal
- Also add the grounded masala and cook for 10 minutes on a medium flame
- Make sure the coconut gets well cooked and aroma of sambhar starts rising
