Pumpkin Curd Rice

Pumpkin curd is a great twist of flavour and texture incorporated with heath benefits in curd.

  • Salt to taste
  • 5 Cup curd
  • 1 Tbsp mustard seeds
  • 3 Green chili
  • 1 Tbsp coriander leaves
  • 1 Tbsp curry leaves
  • 1 Pinch asafoetida
  • 500 g White pumpkin
  • Grate the pumpkin with the help of a grater and strain the extra water.
  • Heat a dry pan in low flame add pumpkin and sauté till it cooks.
  • For tempering, heat a pan, add oil, splutter mustard seeds in it, and add curry leaves.
  • In a bowl, add cooked pumpkin, curd, tempering, green chili, salt and pepper as per taste.
  • Garnish with coriander.
  • Serve it hot or cold with accompaniment.
