Pumpkin Kheer

Kaddu ki Kheer or Pumpkin kheer is basically the Indian Version of the Pumpkin Pudding.

  • 2 Tsp grated coconut
  • 4 Almonds
  • 5 Saffron threads
  • 100g Pumpkin
  • 2 Tbsp fresh cream
  • 2-5 Cup erythritol
  • 2-5 Cup water
  • 2-5 Tsp cardamom powder
  • Soak almonds in hot water for 10 minutes.
  • Boil pumpkin until they get soft and mushy.
  • Grind the almonds, boiled pumpkins and grated coconut into a smooth paste.
  • Heat a pan on low flame, add the ground paste.
  • Add fresh cream, water and cardamom powder. 
  • Let it come to a boil and thicken on low heat.
  • Garnish with saffron strands and serve warm or cold.
