Description
Kaddu ki Kheer or Pumpkin kheer is basically the Indian Version of the Pumpkin Pudding.
Ingredients
2 Tsp grated coconut
4 Almonds
5 Saffron threads
100g Pumpkin
2 Tbsp fresh cream
2-5 Cup erythritol
2-5 Cup water
2-5 Tsp cardamom powder
Preparation Method
Soak almonds in hot water for 10 minutes.
Boil pumpkin until they get soft and mushy.
Grind the almonds, boiled pumpkins and grated coconut into a smooth paste.
Heat a pan on low flame, add the ground paste.
Add fresh cream, water and cardamom powder.
Let it come to a boil and thicken on low heat.
Garnish with saffron strands and serve warm or cold.
