Vangi Bhath

Vangi Bhath is a popular dish in the state of Karnataka vangi translates to egg or brinjals bhath means cooking together.
- 200 g Cauliflower
- 2 Tbsp sesame oil
- 1 Clove
- 5 Tomato
- 2 Tbsp onion
- 1 Dry chili
- 1 Green chili
- 2 Tbsp coriander leaves
- 1 Tsp curry leaves
- 1 Tbsp biryani masala
- 2 Cardamom
- 2 Bay leaves
- 2 Tbsp raw peanut
- 1 Cup brinjal
- 1 Tsp Fennel Seeds
- Heat a pan with coconut oil/ sesame oil and bay leaves, clove, cardamom, fennel, seeds, groundnut, green chili, dry red chili and sauté on medium flame for a minute.
- Add onion and sauté until the onion is translucent. Add tomato, brinjal, turmeric and biryani masala, and sauté for 2 Minutes on medium flame.
- Garnish with coriander leaves and serve hot with raita accompaniment.
